Wheat Rice and Stew Recipe

Wheat rice is a great combination for a plant based, protein and fiber filled meal. Even though wheat rice is not a dish popular in West Africa, it can still be enjoyed with different local stews like kontomire, tomato, garden egg and shito. It is a complete protein meal made by combining wheat and rice. This provides you with all the essential amino acids that each food lacks on its own in one dish. This can serve as a highly nutritional and balanced meal when paired with stews rich in legumes and vegetables.





Ingredients

3 cups of rice

1 cup of wheat

Salt to taste

2 tsp of oil

Stew to pair with

8 cups of water


Directions

  1. In a saucepan, add 2 tablespoons of oil and allow to heat.

  2. Pour the rice and wheat (must be washed) into the heated oil and stir fry for 5-7 minutes.

  3. After frying for 5-7 minutes, add salt to taste.

  4. Pour in 7 cups of water and cover the saucepan to allow the wheat rice to boil on medium to high heat.

  5. After the wheat rice has come to a boil and all the water added has been absorbed, bring the heat down to low and add the remaining cup of water and allow to simmer for 15-20 minutes.

  6. Your wheat rice is now ready to serve along with an all purpose base stew or your stew of choice.
