Mpotompoto, the recipe for today, is a traditional Ghanaian dish, typically made from yam, cocoyam, potato or plantain that is boiled and mashed into a delicious, savory and thick stew. Mpotompoto is a comforting, filling and easy to make dish that is often served as a main meal especially in cooler seasons. This meal is enjoyed by all who taste it, satisfying and leaving an impression with every spoonful.
Lets get into making this delicious Mpotompoto dish;
Ingredients
250g Main starch( yam, cocoyam, potato or plantain) cubes
2 large diced onions
5 tablespoons full of Palm oil
50g of Proteins (Salmon fish or Meat)
2 diced tomatoes
1 tablespoon full of ground pepper
Salt to taste
1 Shrimp seasoning cube
300g Fish Stock
Directions
On medium heat, boil potato cubes and fish stock in a saucepan for 15-20 minutes.
As that is cooking, pour 5 tsp of palm oil into a saucepan and melt it.
Put in the diced onions and tomatoes and fry gently for 3 minutes.
Add the ground pepper and continue frying gently for 2 minutes.
Go in next with the Salmon or meat of choice and fry the oil base for another 5 minutes and transfer into the saucepan containing the potatoes.
Add salt to taste and continue cooking the pottage for an additional 8-10 minutes.
Add the shrimp seasoning cube and stir the pottage.
Cook the Mpotompoto on medium heat until preferred consistency is achieved ( the Potato can be mashed with a spoon to achieve preferred consistency).
Your Mpotompoto is now ready to serve.
