Savory Simplicity: A Flavorful Journey with Our Irresistible Bean Stew Recipe

Today’s recipe is on one of Ghanaian favorite dishes: Red Red, also known as Bean Stew.

Personally, i take so much delight in consuming bean stews because, even though they’re usually quite basic, they’re still very rich in flavor and taste, plus they’re easy to make and they are also budget-friendly, so you already know I’m all for it.

I really enjoy beans stew because it can be eaten at any time of the day (breakfast, brunch, lunch or dinner) and it can be served alone or with plantains, cassava, yams and even rice… Versatile much?!



Lets now delve into how this favorite dish of mine is prepared.


Ingredients

·         1 Onion

·         Ginger (size of your index finger)

·         1200g Black eyed beans

·         ¼ cup Palm Oil

·         1 tsp All seasoning

·         1 tsp Powdered chilli pepper

·         1 Bouillon cube

·         Fresh tomatoes

 

Directions

1.      Put black eyed beans into a medium sized pot and add enough water to cover beans. Cook on low heat add water once all the water is evaporated. Let this cook until tender set aside.

2.      Blend together onion, garlic, and ginger.

3.      In a large pan add palm oil, then pour in the blended mixture. Cook on medium high heat.

4.      Once brown add sliced tomatoes, powdered chilli pepper and bouillon cube, mix until combined

5.      Lower heat and let cook.

6.      Add cooked beans and stir let simmer

Your beans stew is now ready to be eaten along with your braised rice, yam, plantain etc.
