Ingredients
2 plantains
1 big potato
4 eggs
1 onion
1 bell pepper
Vegetable oil
Bullion cube
Powdered pepper
salt to taste
Directions
Start by chopping up the vegetables into cubes and slicing the plantain and potato into flat round discs.
In a frying pan on medium heat, pour in some vegetable oil that is enough to Sautee your vegetables. After the oil heats up, pour in your chopped vegetables and stir continuously for 4-6 minutes. Add a very tiny fraction of the bullion cube and salt to taste and stir for another 1 minute.
In another frying pan with oil, carefully spread the chopped plantains and potatoes and fry on both sides consistently for 3 minutes.
Pour and spread the sauteed vegetables onto the fried plantains.
In a bowl, break and whisk the eggs and add preferred spices including salt to taste and pour onto the plantain and vegetables in the frying pan.
Cover the saucepan tightly with a lid and leave on medium heat for 3-5 minutes and turn to fry on the other side.
Your plantain frittata is now ready to serve and enjoy.
