How to make fluffy pancakes

Fluffy pancakes are a type of pancake that is characterized by a light, airy texture. To achieve this fluffiness, the right ingredients and technique are essential. A common method is to use a thick batter made with all-purpose flour, which provides structure and a slightly chewy texture. However, simply using a thick batter or more flour will not necessarily lead to fluffy pancakes; it could result in heavy, leaden pancakes instead. One trick to make pancakes fluffier is to separate the eggs and stir in unbeaten egg whites after blending the wet and dry ingredients, then let the batter sit for five minutes before cooking. It's also recommended to serve the pancakes immediately or keep them warm in the oven to maintain their fluffy texture.


INGREDIENTS

2 Cups of all-purpose flour

2 Cups of milk

4 Tablespoons of butter

1 large egg

1/4 Cup of sugar

2 Teaspoons of vanilla extract

4 Teaspoons of baking powder

1/2 Teaspoon of salt

1/4 Teaspoon of baking soda



DIRECTIONS

  1. First start by whisking your egg white that you will separate from the yolk.

  2. Pour in your milk, melted butter and vanilla extract and stir gently to form a paste.

  3. Combine together the flour, sugar , baking powder, baking soda and salt in a large-sized bowl.

  4. Slowly pour in the dry ingredients and mix together until smooth (there may be a couple of lumps but that's okay) .

  5. For fluffy pancakes, whisking is essential to achieve the desired look and texture (do not blend the ingredients).

  6. Fluffy pancakes can only be achieved with thick pancake mixtures (batter) so it is essential to avoid adding too much milk.

  7. Set the mixture aside and allow to rest while heating up your frying pan on low to medium heat.

  8. When the pan is hot enough, wipe it with a little butter to lightly grease the pan and pour ¼ cup of the pancake mixture onto the pan and spread out gently into a round shape with the back of your ladle.

  9. When the underside of the pancake turns golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining pancake mixture.

  10. Serve with honey, maple syrup, fruit, ice cream, frozen yoghurt or enjoy plain.
