Ghanaian Okra stew recipe

Okra stew is a traditional Ghanaian dish prepared with tomatoes, red palm oil, onions, spices, and finely chopped okra, and is often enjoyed during family gatherings and celebrations . The stew has traveled across the world, making stops in India, Brazil, the Caribbean, and North America. It has brought richness to North American cuisine, where similar stews were eaten with rice, millet, hominy, and sometimes corn mush. Okra stew has been a staple in African and African diaspora cuisine for a long time, providing thickness and flavor to traditional one-pot stews that are the basis of many traditional African diets . The climatic conditions in Ghana favor the growth of the okra plant, making the Ghanaian okra stew popular not only in Ghana but also a necessity in most African homes. The recipe uses simple ingredients that are readily available, like fish and chopped okra.



Ingredients

20 fingers of okra

Red beef

crab

Wele

1 deboned salmon

Salted fish

2 ladles of Palm oil

2 onions (chopped)

2 fresh tomatoes (chopped)

2 Garden eggs (cut into cubes)

I bouillon shrimp cube

Blended mixed spices (GINGER,GARLIC,ONION)

Fresh pepper

Powdered pepper

Salt to taste

Directions

  1. In clean pot, add 1 cup of water and bring to boil.

  2. While the water is boiling, chop or grate your fingers of okra.

  3. Add the chopped okra and salted fish along with some chopped onions to the boiling water and stir, allow to cook for about 10 minutes and put aside.

  4. Steam your proteins. That is the beef, crab, wele and salmon for 5-7 minutes using the mixed spices and a little bouillon cube.

  5.  In another saucepan, heat the palm oil for 1-2 min.

  6.  Add the rest of the chopped onions, fresh pepper, tomato, and fry for 2min.

  7. Add all your steamed proteins and the rest of the Shrimp bouillon cube and some salt to taste.

  8. Cover and bring to a boil for 2-3 mins.

  9. Add the cooked okra to the stew base on the fire, stir and allow to cook for 2 mins.

  10. Leave to simmer for another 2 mins. Serve with Banku with or eba.
