Base stews are a versatile and essential component in many cuisines that offer a flavorful foundation that can be adapted to suit a variety of dishes. These stews typically start with a blend of vegetables like onions, garlic, and ginger, cooked in oil. Base stews can be customized with herbs, seasonings or additional vegetables that make them suitable for pairing with a wide range of dishes like rice, pasta, yam, plantain or as a sauce for proteins like chicken, fish or beans.
Ingredients
15 fresh tomatoes
1 tin medium tomato paste
10 cloves of garlic
5 onions
3 ginger bulbs
150ml of cooking oil
2 bell peppers
1.5 tsp of powdered pepper
2 bullion cubes
2 tsp of curry powder
Salt to taste
Meat of choice ( steamed)
Meat stock (broth)
Directions
To prepare a base stew, you'll be using two parts of ingredients. The ingredients to fry and blend and the ingredients to add without blending.
You begin by heating cooking oil in a saucepan and sautéing the ingredients to blend that is some chopped onions, diced tomatoes and peeled garlic and ginger for 10-15 minutes.
While the ingredients to blend are sautéing, fry some chopped onions and tomato paste in another saucepan till dark brown.
In the saucepan with the tomato paste, add in the rest of the chopped tomatoes and fry further for 5 minutes.
Blend the sauteed vegetables and pour it into the fried tomato paste saucepan.
Allow to simmer for 10-15 minutes and then add in your meat stock (broth).
Allow to simmer for a second time and add the chopped bell peppers, chopped onions, salt to taste, bullion cubes, curry powder and powdered pepper and your meat of choice.
Leave on low heat to simmer until the flavors melt in and the the stew thickens.
This base can then be stored in the fridge or freezer and will be readily available to pair with a wide range of dishes.
